Quick, Easy & Crispy Roasted Cauliflower

Roasting vegetables is an easy way to increase your veggie intake. Roasting cauliflower gives it a great taste and texture!

Basic Recipe:

1 large head of cauliflower

2-4 tbsp olive oil

½ tsp sea salt

Fresh ground black pepper, to taste

Italian version:

2-3 tbsp parmesan cheese

1 tbsp finely chopped parsley (garnish)

Freshly grated lemon zest (garnish)

Red pepper flakes (garnish)

1. Preheat oven to 425◦F and line a large baking sheet with parchment paper.

2. Cut cauliflower into quarters. Slice off the inner core. Slice cauliflower into ½ “ thick slices, then use your fingers to break apart any florets that are stuck together.

3. Place cauliflower on baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss until the ingredients are evenly distributed. Arrange in an even layer on baking sheet.

4. If you are making the basic recipe, bake until golden on the edges. Turning halfway. Total cooking time 25-35 minutes .

If you are making the Italian version, bake for 15 minutes, remove from the oven, add parmesan cheese. Return to oven and bake another 10-15 minutes. Sprinkle the cauliflower with parsley, lemon zest and red pepper flakes.
